Just in time for the Chinese New Year, the Scarlet Snake cocktail is made by Jessamine McLellan, the lead bartender at Hakkasan.

Ingredients
  • 4 raspberries, muddled
  • 1/2 ounce light simple syrup
  • 1/2 egg white
  • 3/4 ounce campari
  • 3/4 ounce fresh lemon juice
  • 1 1/2 ounce london dry gin
  • 1 dash of angostura bitters, to garnish
Directions
  1. Combine ingredients. Shake and double-strain into a coupe, garnish with a dash of Angostura bitters.
