Ingredients
  • 1/4 cup chopped fresh parsley
  • 5 tablespoon olive oil
  • 1 clove garlic
  • 1/2 cup walnuts, chopped
  • 1/2 cup cashew nuts, chopped
  • 2 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 1/3 cup cornmeal
  • 4 tablespoon softened butter
  • 3 teaspoon baking powder
  • 1 tablespoon sugar
  • dash of salt
  • 1/2 cup cheese, such as jarlsberg® cheese
Directions
  1. Blend all of the ingredients in a food processor and set aside.
  2. Preheat oven to 425 degrees F.
  3. Whisk together eggs and milk. In a separate bowl, mix flour, cornmeal, butter, baking powder, sugar, and salt. Combine all ingredients and stir well. Spoon into paper muffin cups. Cut the Jarlsberg® cheese and press down into the center of the mixture in each muffin cup. Bake for 15 minutes.
  4. Serve the muffins with the nut pesto and enjoy!
