Kadai Chicken is an Indian stir fry dish traditionally made with lots of ghee, cream and spices. This modified version is lighter and easier to prepare, without compromising flavor.

Ingredients
  • 1 pack foster farms simply raised chicken breast tenders
  • 1 large capsicum - diced
  • 2 large onions - diced
  • 1/2 cup plain yogurt
  • 1 tablespoon cream
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 tablespoon tomato paste
  • 4 tablespoon olive oil
  • 1 teaspoon dried cilantro (optional for decoration)
  • 1 teaspoon shredded ginger
  • 1 green chili - chopped
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon tumeric powder
  • red chili (to taste)
  • salt (to taste)
Directions
  1. Instructions 1. Chop the chicken into bite size pieces and keep aside. 2. In a large wok, add 2 tbsp olive oil and heat. 3. Add diced onion, capsicum and stir-fry for 2 minutes. 4. Remove from pan and keep aside 5. Add 2 tbsp olive oil, chicken and stir for on medium flame for 5 minutes (or till chicken is cooked). 6. Add all the spices and stir-fry for another 2 minutes. 7. Now add the yogurt-cream mixture and mix evenly. 8. Stir-fry on medium heat for 2 more minutes. 9. Add the onions and capsicum mix and stir-fry everything together. 10. Let it cook for a minute and then turn off the heat. 11. Transfer to serving plate, sprinkle some dry cilantro, shredded ginger and green chilies. 12. Serve Hot.
