Healthy Blueberry-Peach Cobbler

Ingredients
  • 1 cup fresh blueberries
  • 2 medium peaches, thinly sliced
  • 1 teaspoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/4 cup coconut-almond milk blend
  • 1 tablespoon maple syrup
  • 1/2 cup granola
Directions
  1. Preheat the oven to 325 degrees F.
  2. Combine the fruit, cornstarch, and vanilla extract in a bowl, and stir carefully, to avoid breaking the berries.
  3. Combine the remaining ingredients in a microwave-safe bowl. Microwave in 30 second increments until the granola has softened and most of the liquid has been absorbed. If there is excess liquid, pour it off.
  4. Divide fruit between 2 individual oven-safe dishes. Top with dollops of the granola mixture, spreading it evenly over the fruit.
  5. Place in the center of the oven and bake for 20-25 minutes, until the granola starts to brown, and the fruit is bubbling.
  6. Turn the broiler on to high and broil for 5-10 minutes, until the granola is crisp again.
