Ground turkey stuffed peppers are a a blissful, nearly guilt-free weekday meal. The key to making successful ground turkey stuffed peppers is to boil the peppers before you bake, so they are nice and soft and ready to absorb all of the delicious seasonings in the ground meat!

Ingredients
  • 2 green bell peppers, de-seeded and sliced in half
  • 2 cup water
  • 1/4 cup tomato sauce
  • 1/2 pound ground turkey meat
  • 1/4 cup grated parmigiano
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon oregano
  • salt and pepper to taste
  • 1/4 cup cooked rice
Directions
  1. Heat over to 350 degrees F.
  2. Bring the pot of water to a boil, and place the cleaned and halved green peppers inside the pot and allow to cook until slightly soft, about three minutes.
  3. Using tongs, transfer hot pepper halves into a grease baking dish and allow to cool.
  4. In a seperate bowl, combine meat, rice, onion, seasonings and cheese together, mixing thoroughly.
  5. Divide the meat into four balls and gently pack them into the the pepper halves. Spoon tomato sauce onto each stuffed pepper and top with any extra grated cheese. Cover baking dish in foil and bake for 45 minutes.
