Grilled Banana Bread Ice Cream Sandwiches

This recipe is a fun twist on the ice cream sandwich classic. Serve these at your next gathering to give your summer barbecue a makeover.

Ingredients
  • 1 loaf of store-bought or homemade banana bread*
  • ice cream, for serving
  • chopped walnuts, for garnish (optional)
Directions
  1. Preheat a gas or charcoal grill to medium-high heat. Place the banana bread slices on the grill and cook them until dark grill marks form on the bread, or about 2-3 minutes. Flip the bread slices and cook for an additional 2 minutes. Allow the slices to cool before making the sandwiches.
  2. Remove the ice cream from the freezer and thaw it until it is spreadable, but not melted, or about 10 minutes. Scoop a generous amount of ice cream (about 1 cup) onto a slice of banana bread and spread it evenly across the surface.
  3. Top the ice-cream covered bread with another slice of banana bread, pressing firmly to even out the ice cream. Roll the sandwich in chopped walnuts if desired. Wrap the sandwiches tightly in waxed paper or plastic wrap. Freeze the sandwiches for at least 1 hour.
