Ingredients
  • 3 medium potatoes, grated
  • 5 tablespoon olive oil
  • 1 tablespoon pine nuts
  • 1 1/8 pound ground beef
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 small onion, grated
  • 1 slice cornbread, crumbled
  • 1 clove garlic, sliced
  • 1/4 bunch fresh parsley, minced
  • 1/4 bunch thyme
  • 1 egg
Directions
  1. Grate the potatoes and cook with 2 tablespoons olive oil over medium heat. Sauté the pine nuts with 1 tablespoon olive oil over medium heat.
  2. Gently knead together the ground beef, salt, pepper, cooked potatoes, pine nuts, grated onion, minced parsley, thyme, egg, and crumbled cornbread.
  3. Take 1 tablespoon at a time from the meatball mix and roll to shape your meatballs. Heat 2 tablespoons of olive oil and sliced garlic in a pan over medium heat, brown both sides of the meatballs, and serve.
