Ingredients
  • spray oil
  • 1 medium onion, finely chopped
  • 1 tablespoon grated fresh ginger
  • 2/3 cup water
  • 1 medium pear, cored and finely chopped
  • 2 tablespoon no-calorie granulated sweetener
Directions
  1. Lightly spray a medium saucepan with spray oil.
  2. Add onion, ginger and a pinch of salt.
  3. Cook over medium heat 5–7 minutes, or until tender, stirring occasionally.
  4. Add cranberries and 2/3 cup water.
  5. Bring to a boil.
  6. Reduce heat and simmer gently 4 minutes, or until cranberry skins pop and mixture thickens slightly, stirring occasionally.
  7. Transfer to a bowl. Let cool to room temperature, about one hour.
  8. Stir in pear and no-calorie granulated sweetener.
