It's no surprise that the effortlessly cool NYC supper club, The Darby, would throw down some serious summer drinks for the summer. The Darby's Glamour Girl has the fixings of a straight-up cocktail — Grey Goose, anyone? — with a summer twist: watermelon ice cubes. The fruit adds an unexpected crispness to an already refreshing drink.
Combine the mint leaves, vodka, simple syrup, and lime juice and shake vigorously with ice. Strain into a high ball glass over 3 watermelon purée ice cubes.
To make the watermelon ice cubes, use seedless watermelon and separate the flesh from the rind. Then, purée the fruit and pour it into the ice trays (you can smash the fruit into the ice cube trays as well). Freeze until watermelon ice cubes are ready.
