Creamy Chicken Spinach Alfredo

Weeknight dinners can be so hard, especially if you're coming back from a long day at the office. For dinner, you need something filling, fast, and flavorful. What you need is a meal that takes less than 30 minutes, but tastes like it's been cooking for hours. In short: you need this recipe. It combines all of your favorite homey flavors and pairs elegantly with a much-needed glass of white wine.

Ingredients
  • 3 cup cooked tri-color pasta
  • 1 small onion, diced
  • 1 tablespoon oil
  • 1 small red pepper, diced
  • 1 cup cooked spinach
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 4 thin-cut chicken breasts, sliced
  • 1/2 cup half and half
  • 1 cup grated parmigiano
  • 1 cup grated mozzarella cheese
  • 2 tablespoon butter
Directions
  1. Drizzle oil in a large pan and raise the heat to medium. Pour in the chopped onions and pepper and allow them to cook until soft, stirring occassionally. Add the sliced chicken and spinach next, and allow to cook thoroughly, stirring occasionally.
  2. Drain the oil from the pan and, in a separate pot, mix the cooked pasta and the chicken mixture. Top with seasonings and stir, set aside, and cover the pot with a lid to lock in the heat.
  3. In a saucepan over low heat, pour in milk and butter, and melt butter by constantly stirring. Add in the two cheeses and keep stirring until everything is melted.
  4. Pour the Alfredo sauce over the pasta and chicken mixture and toss together, making sure to coat the chicken and pasta as much as possible. Serve warm.
