Weeknight dinners can be so hard, especially if you're coming back from a long day at the office. For dinner, you need something filling, fast, and flavorful. Drizzle oil in a large pan and raise the heat to medium. Pour in the chopped onions and pepper and allow them to cook until soft, stirring occassionally. Add the sliced chicken and spinach next, and allow to cook thoroughly, stirring occasionally.
Drain the oil from the pan and, in a separate pot, mix the cooked pasta and the chicken mixture. Top with seasonings and stir, set aside, and cover the pot with a lid to lock in the heat.
In a saucepan over low heat, pour in milk and butter, and melt butter by constantly stirring. Add in the two cheeses and keep stirring until everything is melted.
Pour the Alfredo sauce over the pasta and chicken mixture and toss together, making sure to coat the chicken and pasta as much as possible. Serve warm.
