Banana “Ice Cream”

Frozen and pureed bananas have a smooth and creamy texture that will trick anybody into believing they are eating real ice cream
Banana "Ice Cream"

istock-thinkstock

You scream, I scream, we all scream for…. Bananas? That’s not usually how that cheer goes but this “ice cream” recipe requires just 1 ingredient: bananas! Frozen and pureed bananas make for a delectable ice cream substitute with no added sugar or fat. This is completely raw and vegan too! Adding a touch of freshly grated nutmeg and salt heightens the banana flavors and makes this recipe ultra crave-worthy.

To serve, I like to lightly sprinkle the ice cream with fleur de sel salt and serve along sliced regular bananas for a fancier presentation.

Banana Cooking Tip

Don’t throw out your overripe fruit – instead blend into a smoothie or salad dressing, add to muffin batter, bake into a cobbler, or boil down with sugar and a little lemon juice to make jam.
