Autumn calls for apple picking and why not put them to good use? Try making these baked apples to start your day off on the right foot. It may just feel like you are having a healthy dessert for breakfast!

Ingredients

  • apples quartered, seeds removed, and cut into chunks
  • 1/4  Teaspoon  cinnamon
  • 1/8  Teaspoon  ginger
  • 1/8  Teaspoon  cardamom
  • 1/2  Teaspoon  ghee

Directions

Cook cut apples in one inch of water in a small pot over medium heat.  Add spices and cook for 10 minutes or until soft. 

Pour into bowl when done cooking and mix in ghee.

When buying apples, they should be firm, free of bruises, and heavy for their size.

Don’t throw out your overripe fruit – instead blend into a smoothie or salad dressing, add to muffin batter, bake into a cobbler, or boil down with sugar and a little lemon juice to make jam.
