Serving a well-made hot cocktail at a busy bar can be a real challenge. But at Hotel Griffou in New York City, co-owner and beverage director Johnny Swet cleverly treats this winter weather cocktail as if it were a cappuccino — steaming it to make it hot. This smooth, spiked take on chai tea will make you cozy up to the fire and not want to leave, save to fix a second round.


  • 1 ounce Laird's Applejack
  • 1 ounce apple schnapps
  • 1/2 ounce cinnamon syrup
  • 1 ½ ounces black tea syrup
  • 1 dash cardamom bitters
  • 2 dashes chocolate bitters
  • 2 ounces milk
  • Whole nutmeg, grated
  • Cinnamon stick, for garnish


Mix all of the ingredients together in a tin, then steam.

Serve in a coffee mug and garnish with a cinnamon stick.

Don’t throw out your overripe fruit – instead blend into a smoothie or salad dressing, add to muffin batter, bake into a cobbler, or boil down with sugar and a little lemon juice to make jam.
