Ingredients

  • 3 medium-large gala or Fuji apples, cored and sliced with peel on (approximately 15-18 slices per apple)
  • 1 teaspoon cinnamon
  • ¼ cup raisins, packed
  • ¼ cup sunflower seeds
  • 2 tablespoons uncooked quinoa
  • ½ cup water

Directions

Preheat oven to 350 degrees F. Spray a 9-by-9-inch brownie pan with cooking spray. Spread 1/2 the raisins on bottom of pan. Add and spread apple slices. Sprinkle cinnamon over apples. Add remainder of raisins and sunflower seeds. Sprinkle on quinoa. Pour water into corner of pan so it coats the bottom — don’t pour over apples. Bake for 50 to 60 minutes, taking care not to burn the raisins.

Apple Shopping Tip

When buying apples, they should be firm, free of bruises, and heavy for their size.

Apple Cooking Tip

Don’t throw out your overripe fruit – instead blend into a smoothie or salad dressing, add to muffin batter, bake into a cobbler, or boil down with sugar and a little lemon juice to make jam.
