Is there any flavor more comforting than apple pie? This quick and easy breakfast features perfectly sweet buttermilk pancakes wrapped around warm apple pie slices, creating a dish that is sure to start your day off right.This recipe is courtesy of Krusteaz.

Ingredients
  • 1 cup pancake mix, preferably krusteaz buttermilk pancake mix
  • 1 cup apple juice or apple cider
  • 1/2 teaspoon cinnamon
  • 1 can (21 ounces) apple pie filling
  • powdered sugar, for serving
Directions
  1. In a large bowl, whisk pancake mix, apple juice or cider, and cinnamon until smooth. Batter will be thin. Let sit while pan is preheating.
  2. Preheat a small frying pan over medium-low heat. Spray with nonstick cooking spray.
  3. Place about 2 tablespoons of batter into pan and swirl the pan to make a thin pancake that’s about 5 inches in diameter.
  4. Cook about 45–60 seconds then carefully flip and cook for an additional 30 seconds, until the bottom is browned. To easily flip the pancake make sure you’ve sprayed the pan with nonstick cooking spray. Use a spatula to lift up the edges. Work the spatula under one part of the pancake, and then flip it.
  5. Warm the apple pie filling, if desired.
  6. Place 3–4 apples from the apple pie filling in the center of each pancake and roll up.
  7. Dust with powdered sugar and serve warm.
