Grilled Nectarines
Ingredients
  • 1 cup raw pumpkin seeds, soaked in water for four hours
  • 2 1/2-3 cup filtered water
  • 2 teaspoon agave syrup
  • 1-1/2 cup chilled pumpkin seed milk (see recipe above)
  • 3 tablespoon frozen pumpkin purée
  • 1/4 cup frozen cranberries
  • 1/2 teaspoon pumpkin pie spice
  • 2 tablespoon chia seeds, soaked in water for 10 minutes
  • dash of sea salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon lucuma powder
  • honey to taste
Directions
  1. Combine all ingredients in a blender and blend for 1-2 minutes, depending on your blender, until smooth and creamy. You can strain if you wish, but you will strain out a lot of the pumpkin seeds’ nutrients. Refrigerate in a mason jar for up to three days.
