Chicken Rub

Great for chicken or fish, this flavorful rub will kick up your meat while staying lean and mean. 


  • 2 cloves garlic, minced
  • 2 teaspoons lemon zest
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • ½ teaspoon salt 


Combine all ingredients in a small bowl and mix. Rub mixture onto chicken about 30 minutes before cooking.

Buy whole chickens and ask the butcher to quarter them for you. You will save an average of $5 per pound, or more.

Allow meat to rest for at least ten minutes before slicing into it; otherwise, the juices will leak out.
