Ingredients
  • 2-3 peaches, diced
  • 3 cup watermelon, diced
  • 3-4 pickling cucumbers, diced
  • 1/2 cup red onion, minced
  • 2 garlic cloves, minced
  • 1/4 cup cilantro, minced
  • 2 limes, zested
  • 3-4 tablespoon freshly sqeezed lime juice
  • 2 tablespoon extra virgin olive oil
  • 1 bag late july lime tortilla chips
Directions
  1. In a large serving bowl, gently combine the sliced peaches, watermelon, cucumbers, red onion, garlic, cliantro, lime zest, lime juice and olive oil. Let stand for 5-10 minutes before serving to let the flavors combine. Season to taste, adding more lime zest, lime juice and/or olive oil. Serve with Late July's Organic Lime Tortilla Chips or other non-GMO tortilla chips of your choice. Enjoy!
