Ingredients
  • 3 quarts water
  • one 750-milliliter bottle white wine
  • 1 1/2 cup kosher salt
  • 4 cup sugar
  • 15 pound chicken wings, split and rinsed
  • 2 cup garlic powder
  • 2 cup onion powder
  • 1/2 cup chili powder
  • 1/4 cup cayenne
  • 2 cup spanish paprika
  • 1 cup salt
  • 4 quarts all-purpose flour
  • 2 cup pure maple syrup
  • two 7-ounce cans chipotle peppers
  • 1 1/4 cup buffalo sauce
  • 1 pound butter, melted
  • vegetable oil, for frying
Directions
  1. Combine the water, white wine, salt, and sugar together and mix thoroughly. Add the wings and let them sit for a minimum of 4 hours.
  2. Mix the powders, cayenne, paprika, salt, and flour together thoroughly.
  3. To make the sauce, combine the maple syrup, chipotle peppers, Buffalo sauce, and butter in a blender and purée until well mixed.
  4. Drain the wings from the brine and place in the seasoned flour until fully covered. Shake off excess flour and set aside. Fill a large, heavy skillet halfway with oil and heat to 350 degrees. Fry wings in batches until thoroughly cooked about 12 minutes. Let cool on sheet pan spread evenly apart.
  5. Just before serving, increase the heat to 375 degrees and fry the wings until very crispy (about 2 minutes). Place the wings in a bowl and cover with the maple chipotle sauce. Serve with sliced celery stalks and your favorite blue cheese sauce.
