Heart-Healthy Potato Salad

Waxy red potatoes are a healthier choice than starchy potatoes like russet because they contain more fiber and a lower glycemic load. Homemade mayonnaise made with heart healthy extra-virgin olive oil makes this salad a little bit healthier, too.
