Ingredients
  • 1 cup fat-free soy milk
  • 1/4 cup pure maple syrup
  • 1/4 cup chickpea flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • cooking spray, for the skillet
  • 8 whole-wheat bread slices
Directions
  1. In a bowl, whisk together the soy milk, maple syrup, chickpea flour, cinnamon, ginger, nutmeg, and cloves and pour into a shallow dish. Heat a nonstick skillet over medium-high heat and spray with cooking spray. Soak bread slices in the milk mixture and then transfer to the heated skillet.
  2. Cook each side until slightly brown and crisp, about 2 minutes per side, re-spraying skillet between batches or as necessary.
