Wine is fermented grape juice, which means that the juice can spoil easily if not stored at the right temperature. Once the temperature gets over 80 degrees, your wine can start cooking. If the wine then sits there for too long or the temperature gets over 90 degrees, it can be ruined completely.

If the smell is similar to stewed raisins and fruit, the wine has probably turned.   Look at a plastic bottle filled with apple juice. If you happen to let the juice sit in a hot garage for a few days or longer, it can start to expand. While the juice cooks in the bottle, it will start turning rancid. Although wine is stored in glass bottles and they do not expand, the same thing will begin happening to the wine that happens to the apple juice. This is why temperature is so very important. You may feel that because the wine was sold in an upright position, it will be best to store it this way at home. The cork is actually made to help protect the wine from oxygen. If the wine sits upright, it is not going to come into contact with the cork and the seal on your bottle can loosen. When this happens, oxygen will get in and then spoil your wine. Keep your wine in constant contact with the cork by storing on its side and protect the wine and seal.   If you enter into a store that is warm and you notice that all of the bottles have been in an upright position for a long period of time, you could be simply wasting your money on a wine that has lost a lot of flavour and qualities simply because of the way that it was stored.
