Baleadas are one of Honduras' most popular foods. Baleadas are wheat flour tortillas — often quite thick — folded in half and filled with mashed fried beans. The authentic dish originated in El Progreso.

Ingredients
  • 2 cup flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup water
  • 3 tablespoon vegetable oil
  • 1 can (16 ounces) low-fat refried black beans, warmed
  • 1 ripe avocado, sliced into 16 pieces
  • 1/2 cup sour cream
  • 1 package (4 ounces) athenos traditional crumbled feta cheese
Directions
  1. Mix the flour, baking powder, and salt in medium bowl. Stir in water and oil to form dough.
  2. Knead dough 5 minutes on a lightly floured surface. Shape into disk. Cover with plastic wrap; let rest 20 min.
  3. Divide dough into 8 equal pieces. Roll each dough piece into 6-inch disk; cover with plastic wrap. Repeat with remaining dough to make 8 tortillas.
  4. Heat a large skillet on medium-high heat. Add tortillas in batches; cook 1 minute on each side until browned and lightly puffed.
  5. Spoon warm beans evenly over hot tortillas; top with remaining ingredients. Fold in half. Serve immediately.
