Ingredients

For the chipotle-lime mayonnaise

  • 1/2  Cup  mayonnaise
  • 1  Teaspoon  chipotle in adobo, minced
  • 1  Teaspoon  garlic, minced
  • 1  Tablespoon  fresh lime juice
  • 1  Tablespoon  chopped cilantro
  • Salt and pepper, to taste

For the sandwich

  • slices Pumpernickel bread, toasted
  • slices bacon, cooked and crispy
  • tomato, sliced
  • head of lettuce, leaves torn
  • avocados, pitted, seeded, and sliced

Directions

For the chipotle-lime mayonnaise

Combine all ingredients in a medium bowl and refrigerate until ready to use.

For the sandwich

Spread the chipotle-lime mayonnasie on each of the bread slices. Layer on 2 bacon slices on each, 1 tomato, 1 lettuce leaf, 1/2 an avocado. Top with the other piece of bread.
