Quick: Name two perfect breakfast foods. Bacon, egg, and cheese sandwiches and French toast, you say? So do we. So why not combine the two?  Even though the idea sounds like it might have been hatched late at night in a college dorm room, and we're sure it was at some point in time, we decided to go all-in and see what we could come up with. Thick slices of brioche-style pullman loaf get a soaking in salted eggs and a brown on the griddle, then two slices get filled with thick-sliced bacon and American cheese and finish melting in the oven.  The end result? Bacon, Egg, and Cheese French Toast
Ingredients
  • 4 jumbo eggs
  • 1/4 cup milk
  • salt and pepper, to taste
  • 1 tablespoon butter
  • four 3/4-inch slices stale bread, preferably brioche
  • 6 slices bacon, cooked
  • 2 slices american cheese
Directions
  1. Preheat the oven to 325 degrees.
  2. Crack the eggs into a wide, flat-bottomed dish, add the milk, salt, and pepper, and whisk until combined. Soak the bread slices individually until fully saturated, for about 2 minutes each. Melt the butter in a pan or griddle over medium-high heat and brown the bread slices, about 6 minutes. If centers are still uncooked, place in the oven for 5-10 more minutes.
  3. Add 3 slices of bacon and 1 slice of cheese to the top of a piece of French toast, and place another slice on top. Wrap in foil and place in the oven until the cheese is completely melted, for about 10 minutes.
