Guacamole is an appetizing dip that is usually quickly scooped up and finished at parties or whenever it's served. Creamy, spicy, and just plain fun to eat, this popular dish can be made in a variety of ways. In his latest cookbook, Truly Mexican, chef Roberto Santibañez plays around with Classic Guacamole, adding bits of crab and shrimp for his Seafood Guacamole and pungent blue cheese for his aptly named Blue Cheese Guacamole
