These protein "truffles" are so ridiculously easy that I feel somewhat silly adding them to this collection. Then again, my super-simple, silly recipes are often my most popular. They are certainly favorites in my repertoire, in large part because of their fast factor, but also because of their portability and candy-like appeal. Plus, they are endlessly customizable by varying the spices, extracts, and other add-ins, or by giving them a chic coating of chia seeds, cocoa powder, or chopped nuts. Ingredients
  • 1/2 cup natural, unsweetened nut or seed butter
  • 3 tablespoon honey
  • 1/8 teaspoon fine sea salt
  • 2/3 cup all-natural sweetened vanilla whey protein powder
  • 1/2 cup peanut butter
  • 3 tablespoon honey
  • 1 1/2 tablespoon water
  • 1/8 teaspoon fine sea salt
  • 1 1/2 tablespoon unsweetened, natural cocoa powder
  • 1/2 cup natural, unsweetened nut or seed butter
  • 2 teaspoon instant espresso powder, dissolved in 2 teaspoons of warm water
  • 1/8 teaspoon fine sea salt
  • 2/3 cup chocolate protein powder
  • 3 tablespoon honey
  • 1/2 tablespoon natural, unsweetened nut or seed butter
  • 3 tablespoon dark molasses
  • 1/8 teaspoon fine sea salt
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 2/3 cup packed all-natural sweetened vanilla whey protein powder
  • 1/2 cup natural, unsweetened nut or seed butter
  • 3 tablespoon honey
  • 1/8 teaspoon fine sea salt
  • 1/8 teaspoon ground nutmeg
  • 3/4 teaspoon ground cinnamon
  • 2/3 cup packed all-natural sweetened vanilla whey protein powder
  • 3 tablespoon chopped raisins
Directions
  1. Mix the nut or seed butter, honey, and salt in a medium bowl until blended. Add the protein powder, stirring until completely combined (mixture will be firm). Scoop about 1 ½ tablespoons of the mixture into your hands and shape into 1-inch balls.
  2. Mix the peanut butter, honey, water, and salt in a medium bowl until blended. Add the protein powder, stirring until completely combined (mixture will be firm). Scoop about 1 ½ tablespoons of the mixture into your hands and shape into 1-inch balls. Place the natural cocoa powder in a shallow dish and roll the balls in the coating, pressing lightly to adhere.
  3. Mix the nut or seed butter, honey, espresso mixture, and salt in a medium bowl until blended. Add the protein powder, stirring until completely combined (mixture will be firm). Scoop about 1 ½ tablespoons of the mixture into your hands and shape into 1-inch balls.
  4. Mix the nut or seed butter, molasses, and salt in a medium bowl until blended. Add the spices and protein powder, stirring until completely combined (mixture will be firm). Scoop about 1 ½ tablespoons of the mixture into your hands and shape into 1-inch balls.
  5. Mix the nut or seed butter, honey, and salt in a medium bowl until blended. Add the spices and protein powder, stirring until completely combined (mixture will be firm). Add the chopped raisins last, and scoop about 1 ½ tablespoons of the mixture into your hands and shape into 1-inch balls.
