There is honestly no better way to begin the day than with a delicious, hearty breakfast. So why not kick-start your morning with whole-wheat waffles, fresh fruit, and sweet maple syrup?
Bananas taste amazing in waffles and give them a great sweetness without all the added sugar. They also help keep the waffles super moist and really fluffy! I threw in some of my favorite spices such as cinnamon and nutmeg and even a hint of vanilla.

INGREDIENTS
- Cooking spray
- 2 eggs, beaten
- 1 3/4 cups nonfat milk
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 2 cups whole-wheat flour
- 4 teaspoons baking powder
- 1 1/2 packets stevia in the raw or 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 ripe banana, mashed
- Maple syrup, for serving
DIRECTIONS
Preheat the waffle iron and coat with cooking spray. Whisk the eggs in a large bowl until fluffy and bubbles start to form. Then, whisk together the milk, applesauce, and vanilla with the egg mixture; set aside. In another bowl, combine the flour, baking powder, sugar, salt, and spices. Beat in the flour mixture with the egg mixture along with the banana.
Carefully spoon the batter onto the pre-heated waffle iron and cook until golden brown. Repeat with the remaining batter. Serve hot with fresh fruit and maple syrup, enjoy!
