Simple sells. Creative toppings are burgers dominant language now, and several of the most interesting burger builds of the past week speak that language fluently. But I recall Euripides Pelekanos, CEO of the Bareburger chain, telling this site earlier this year that “a lot of people want it simple–maybe a bacon cheeseburger–without fancy toppings. I like just ketchup and pickles so I can taste the quality of the meat.” That’s the thinking, I’m guessing, behind the Byron chain’s Double Bacon Cheese. Simply elegant.
