A Vegetarian Thanksgiving

It's that time of the year again! Time to start planning, shopping, and preparing.  

With Thanksgiving right around the corner, most home cooks are ready to go without giving it too much thought: turkey, stuffing, mashed potatoes, and gravy are a must. And with hundreds of cooking magazines, TV shows, and of course the Internet, offering fancier versions of the traditional dishes, the possibilities are endless.

For some of us, however, this is the time when we find ourselves scratching our heads, wondering how on Earth we can pull off a somewhat traditional Thanksgiving meal, vegetarian style.

With more and more people leaning toward a meat-free diet, the need for vegetarian (which includes dairy and eggs) and vegan (100-percent plant-based) choices is rapidly increasing.
