I am a 43 year old wife and mom from the suburbs of Chicago. I am a type 2 insulin-dependent diabetic foodie who tries to create delicious, healthy food all while trying to maintain my blood sugar. I've gone from only liking cucumbers and carrots well into my 30's, to now loving butternut squash, sweet potatoes, and spinach!
