Simon Mansion And Supper Club To Open At Hard Rock Hotel & Casino Punta Cana

This May, chef Kerry Simon will open his restaurant, Simon Mansion and Supper Club, at the Hard Rock Hotel & Casino Punta Cana, a AAA Four Diamond-awarded Caribbean resort, in the Dominican Republic. According to the release, the "edgy" restaurant will bring the chef's "organic, contemporary take on California cuisine" to the Caribbean.

Chef Simon's menu aims to take an accessible and dynamic approach while featuring quality seasonal ingredients. Alongside the restaurant's corporate chef David Cruz, Simon traveled the Caribbean to learn about the taste of different locales. This experience influenced an "eclectic" menu that includes a roasted organic carrot and avocado salad with citrus dressing, a Caribbean lobster roll, curried crab and watermelon salad, as well as a rack of lamb served with roasted vegetable quinoa, chickpea purée, and cucumber yogurt.

The beverage menu will include Californian wines, select beers, spirits, and seasonally influenced cocktails. Highlighting tastes of the Dominican Republic, these cocktails will include Añejo Highball (Añejo rum, orange curaçao, and ginger soda), Summer Mist (Ciroc vodka, muddled grapes, mint, and simple syrup), and the Higuey Kicker (Caribbean rum and vermouth).
