This is a great herbed butter, created to have a delicious depth of flavor.  Add a pad to grilled steak, salmon, or a baked potato and let the flavors melt in.

Ingredients

  • 1/2  Pound  plus 1 tablespoon butter, softened
  • cloves garlic, minced
  • large shallot, minced
  • 1  Teaspoon  chopped thyme
  • 1 1/2  Teaspoon  chopped tarragon
  • 1 1/2  Teaspoon  Vintage Merlot sea s.a.l.t.*

Directions

In a small non-stick pan melt 1 tablespoon of butter and add the shallot and garlic. Sauté until softened, stir in the rest of the ingredients, and cook until the herbs are slightly wilted. Put on a plate and let cool. In the meantime, mash the softened butter in a bowl and lay out a sheet of parchment paper. When the herb mixture has cooled, mix it into the butter gently. Once the herbs are mixed throughout, scoop the fragrant butter onto parchment paper. Carefully roll it in the parchment paper forming a log.  Chill until ready to use, preferably overnight.

Butter Shopping Tip

Be sure to purchase the correct flour a recipe calls for – flours differ in gluten or protein content, making each suited for specific tasks.

Butter Cooking Tip

Insert a toothpick into the center of cakes, bar cookies, and quick breads to test for doneness – it should come out clean or only have a few crumbs clinging to it.
