Turkey Avocado Lettuce 'Tacos'

Ingredients
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 1 pound lean ground turkey
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 tablespoon tomato paste
  • 1/2 cup water
  • 1 avocado, ripe, halved, pitted, and diced
  • 1 teaspoon fresh lime juice
  • 1 large tomato, cored and chopped
  • 1 medium red onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeƱo, seeded and minced
  • 12 butter lettuce leaves, washed and trimmed
Directions
  1. Heat oil over medium heat in large non-stick pan. Add onion, chili, cumin, and salt; cook, stirring occasionally, until soft.
  2. Add turkey; cook stirring occasionally until cooked through.
  3. Add tomato paste and water and simmer until liquid evaporates. Remove from heat.
  4. Combine tomato, avocados, lime, onion, cilantro, and jalapeno is small bowl.
  5. Fill lettuce leaves with warm turkey mixture and avocado salsa, dividing evenly.
  6. Serve with fresh lime wedges if desired.
