Summer Grilled Cake Kebabs With Orange Frosting

Who says the grill is just for barbecued meats? This very simple, super indulgent recipe is perfect for anyone that likes to combine warm and satisfying desserts with fresh and zesty fruits. Plus, hello orange frosting. It  doesn't get more summery than that!

Ingredients
  • 1 pound cake loaf
  • 1 stick of butter
  • 1 pint of strawberries
  • 1 pint of raspberries
  • 1 package of cream cheese, 8 ounces
  • 1 cup confectioner's sugar
  • fresh , and extractjuice of 2 oranges
  • 1 teaspoon vanilla extract
Directions
  1. On the stovetop, heat cast iron grill pan for 5 minutes. While the pan is warming, cut your loaf pount cake into slices (about 1 inch thick) and then cut each slice into four quarter cubes. Microwave your stick of butter until it is totally melted, about 2 minutes. Using a basking brush, gently brush the cakes with a little bit of butter, roughly 1 teaspoon per side of cake. Place the cubes of cake onto the grill and allow it to grill for at least 2 minutes, or enough time to get faint grill marks. Repeat this process with the other side of the cake cube. When both sides of the cake cube has grill marks, remove them from the grill pan and place them on a plate. Allow them to cool.
  2. Wash your berries and cut off the stems of the strawberries. Skewer a strawberry, a raspberry and a cake cube onto your skewers. Repeat until all of the ingredients are used.
  3. Place the softened block of cream cheese into a large mixing bowl. Dump in the confectioner's sugar, orange juice, and extract.
