Ingredients

For the kebabs

  • 1 pound cake loaf
  • 1 stick of butter
  • 1 pint of strawberries
  • 1 pint of raspberries

For the orange frosting

  • 1 package of cream cheese, 8 ounces
  • 1 cup confectioner's sugar
  • Fresh , and extractjuice of 2 oranges
  • 1 teaspoon vanilla extract

Directions

For the kebabs

On the stovetop, heat cast iron grill pan for 5 minutes. While the pan is warming, cut your loaf pount cake into slices (about 1 inch thick) and then cut each slice into four quarter cubes. Microwave your stick of butter until it is totally melted, about 2 minutes. Using a basking brush, gently brush the cakes with a little bit of butter, roughly 1 teaspoon per side of cake. Place the cubes of cake onto the grill and allow it to grill for at least 2 minutes, or enough time to get faint grill marks. Repeat this process with the other side of the cake cube. When both sides of the cake cube has grill marks, remove them from the grill pan and place them on a plate. Allow them to cool.

Wash your berries and cut off the stems of the strawberries. Skewer a strawberry, a raspberry and a cake cube onto your skewers. Repeat until all of the ingredients are used.

For the orange frosting

Place the softened block of cream cheese into a large mixing bowl. Dump in the confectioner's sugar, orange juice, and extract.

Summer Shopping Tip

As an alternative to sugary, salty, processed foods, try shopping for fruits and vegetables that are in season.

Summer Cooking Tip

For a healthier alternative, substitute honey or molasses for sugar in baking recipes, and use a 3:1 blend of canola oil to olive oil instead of butter when cooking over the flame.
