Ingredients
  • 240 gram cocoa powder
  • 1035 gram water
  • 500 gram sugar
  • 1/2 teaspoon salt
  • 200 gram chocolate
  • 1/4 cup baileys
  • 4 eggs
  • 600 gram sugar
  • 1 tablespoon salt
  • 1 tablespoon vanilla
  • 542 gram oil
  • 61 gram cocoa powder
  • 72 gram cake flour
  • 2 cup buttermilk
  • 2 teaspoon lemon juice
  • 2 teaspoon baking soda
  • green food dye
Directions
  1. Choose your favorite mint and Oreo ice cream and place in the bowl.
  2. Whisk cocoa powder, sugar, salt, and water together.
  3. Bring to a boil whisking constantly.
  4. Take off the heat and whisk in the chocolate.
  5. Whisk in the Baileys.
  6. Cool.
  7. Drizzle the chocolate sauce on top of the ice cream.
  8. In a stand mixer, paddle eggs, sugar, salt, and vanilla.
  9. Stream in oil.
  10. In a separate bowl, mix cocoa powder and flour in separate bowl.
  11. Alternatively add dry ingredients and buttermilk, scraping in between.
  12. Whisk lemon juice and baking soda together and add to the batter.
  13. Add as much green color to the cupcakes as you like. Don't forget to add a little yellow to make them really pop!
  14. Bake into cupcake pans with paper. Place the green velvet cupcake on top of the ice cream.
  15. Place hardened chocolate in the shape of a bowl on top of the cupcake, fill with your favorite gold candy.
  16. Add green sugar cookies to the sides of the dessert.
  17. Sprinkle Lucky Charms or your other favorite candy throughout the dessert.
  18. You’ve reached the end of the rainbow; now enjoy this St. Patrick’s Day treat!
