This skinny version of a Piña Colada packs a punch.

Add coconut water and take out any added sugar and you have a low-cal Piña Colada without the "sticky, sugary coconut-y mess," says cocktail guru John Henderson of The Happiest Hour tiki bar in New York.

Ingredients

  • part coconut rum (like Sugar Island coconut rum)
  • 1/2  Teaspoon  orange marmalade
  • cube fresh pineapple
  • part coconut water
  • splash soda water
  • sliced pineapple for garnish

Directions

Muddle pineapple well in a shaker, and add remaining ingredients and shake until frothy. Strain into a highball glass over ice. Top with a splash of soda and garnish with a fresh slice of pineapple.
