Ingredients
  • 1 3/4 pound lobster, cooked, meat pulled from shells
  • 1/2 an avocado, thinly sliced
  • 2 eggs, preferably pete & gerry’s organic eggs
  • 1/2 of a whole grain baguette, divided in half or 2 whole grain rolls
  • 1 tablespoon salted butter, melted
  • salt and pepper
Directions
  1. Toast baguette or rolls.
  2. Spray medium salute pan with cooking spray.
  3. Fry egg, according to desired doneness.
  4. Layer baguette with avocado, lobster meat, and egg.
  5. Drizzle with melted butter.
  6. Salt and pepper to taste.
  7. Enjoy!
