Located in one of the world’s gastronomic capitals, JW Marriott El Convento Cusco turns up the heat with its ají-infused Pisco sour in honor of National Pepper Month. Commonly known as the Peruvian hot pepper, ajís can range in heat from 40,000-50,000 on the Scoville heat meter. Commonly found in dried or powdered form, it’s got a pungent flavor that finds its way into many traditional Peruvian dishes.

Ingredients

For the Ají-infused Pisco Sour:

  • ice cubes
  • 3  Ounces  Pisco, infused with three dried aji peppers
  • 1  Ounce  freshly squeezed lime juice
  • 1  Ounce  simple syrup
  • 1  Ounce  egg white
  • Angostura bitters

Directions

For the Ají-infused Pisco Sour:

Add the Pisco, lime juice, simple syrup, egg white, and ice cubes to a cocktail shaker and shake vigorously for 20 to 30 seconds. Pour into a chilled, stemless martini glass and garnish with three drops of bitters.
