Grilled Pork Chops With Apple Butter Barbeque Sauce

A delicious take on traditional  pork chops perfectly made using a Kenyon grill.

Kenyon Pork Chops
Ingredients
  • 1 onion-diced
  • 1 carrot-diced
  • 2 tablespoon butter
  • 2-3 cloves of garlic-diced
  • 2 tablespoon fresh ginger-grated
  • 1 ancho pepper, seeded and finely chopped
  • 1/2 cup bbq sauce
  • 1/2 cup apple butter
  • 1/4 cup apple cider
  • 3 tablespoon cajun seasoning
  • kosher salt
  • fresh black pepper-ground
Directions
  1. Saute onion and carrot in butter until lightly browned. Add garlic and ginger and cook until softened. Do not brown. Add prepared barbeque sauce and Ancho pepper that has been softened in a little apple cider and warmed. Add Apple butter and simmer for 5 minutes.
  2. Season pork chops on both sides with salt, pepper and Cajun seasoning. Heat the Kenyon Custom All Seasons Grill to medium high heat. Once the grill has preheated, place pork chops on the Kenyon Custom All Seasons Grill at an angle. The best way to get grill marks is to angle what you are grilling. Grill over medium high heat for 3 to 4 minutes per side - though it really depends on how thick the chops are.
  3. Let the chops stand a few minutes before serving with apple butter barbeque sauce.
