This refreshing salad gives a nod to summer with grilled peaches and dandelion greens, and is the perfect dish to create when you're craving something light and grilled.
Grill the peaches quickly, just until marked. Combine the mustard, balsamic, canola oil, thyme, and lemon zest in a blender and purée. On a plate, place the arugula in the center and top with grilled peaches. Add the dandelion greens and and toss with dressing. Garnish with feta cheese and serve.
