Fluffy Yogurt Pancakes With Honey Nut Granola

Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup low-fat plain yogurt
  • 1 egg, lightly beaten
  • 3 tablespoon vegetable oil
  • 1/2 cup granola, such as sweet home farm honey nut granola
Directions
  1. In large bowl, whisk flour, sugar, baking powder, baking soda and salt.
  2. In separate bowl, whisk milk, yogurt, egg and 1 tbsp of the vegetable oil.
  3. Stir into flour mixture just until combined. Fold in granola.
  4. Lightly brush large nonstick skillet with some of the remaining oil; heat over medium heat.
  5. Using scant ΒΌ cup of batter per pancake, pour four pancakes into skillet.
  6. Cook for about 2 minutes or until bubbles appear on top and bottom is golden brown.
  7. Flip and cook for about 1 minute or until bottom is golden brown.
  8. Repeat with remaining batter and oil.
