Ingredients
  • 1 cup butter, such as country crock spread
  • 2 cup granulated sugar
  • 4 large eggs
  • 1/3 cup milk
  • 2 teaspoon vanilla extract
  • 3 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 pound confectioners sugar
  • 1/2 cup butter such as country crock spread
  • 1 teaspoon vanilla extract
  • red or blue food coloring
Directions
  1. Preheat oven to 350 degrees F. Line 20 muffin cups with paper cupcake liners; set aside.
  2. Combine Country Crock® Spread, sugar, eggs, milk and vanilla in large bowl with wooden spoon. Stir in flour and baking powder until blended. Evenly spoon batter into prepared pans.
  3. Bake 20 to 25 minutes until toothpick inserted in centers comes out clean. Cool on wire rack 10 minutes. Remove cupcakes from pans and cool completely.
  4. For the frosting, beat all ingredients in large bowl with electric mixer until smooth and fluffy, about 3 minutes. Stir in 1 drop red or blue food coloring to tint frosting. Evenly spread frosting on cupcakes.
