For the first time ever, two colors — a blushing pink and a cool blue — were revealed as the Color of the Year. Reaching pop culture status, these it-colors will impact American fashion, make-up, and home décor, and will even make a foray into food. Country Crock offers two simple frosting recipes reminiscent of each shade and a wonderful cupcake recipe. Baking on-trend takes only three simple steps and is perfect for topping cupcakes and cakes. Plus it adds a finishing touch to baked treats for that picture-perfect social post!

Ingredients

For the cupcakes:

  • 1  Cup  butter, such as Country Crock Spread
  • 2  Cups  granulated sugar
  • large eggs
  • 1/3  Cup  milk
  • 2  Teaspoons  vanilla extract
  • 3  Cups  all-purpose flour
  • 1  Tablespoon  baking powder

For the frosting:

  • 1  Pound  confectioners sugar
  • 1/2  Cup  butter such as Country Crock Spread
  • 1  Teaspoon  vanilla extract
  • Red or blue food coloring

Directions

For the cupcakes:

Preheat oven to 350 degrees F. Line 20 muffin cups with paper cupcake liners; set aside.

Combine Country Crock® Spread, sugar, eggs, milk and vanilla in large bowl with wooden spoon. Stir in flour and baking powder until blended. Evenly spoon batter into prepared pans.

Bake 20 to 25 minutes until toothpick inserted in centers comes out clean. Cool on wire rack 10 minutes. Remove cupcakes from pans and cool completely.

For the frosting:

For the frosting, beat all ingredients in large bowl with electric mixer until smooth and fluffy, about 3 minutes. Stir in 1 drop red or blue food coloring to tint frosting. Evenly spread frosting on cupcakes.
