The pumpkin puree adds a creamier texture, while the chocolate chips adds the sweetness and texture. It's a great snack to make for the holidays. Serve it with some hot chocolate or other warm beverages!

Ingredients
  • 1 1/2 cup whole wheat flour
  • 2 cup sugar
  • 15 ounce can pumpkin puree
  • 1/2 cup mini chocolate chips
  • 3 eggs, lightly beaten
  • 2/3 cup canola oil
  • 2 teaspoon baking soda
  • 1 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 1/2 cup all-purpose flour
Directions
  1. Preheat oven to 350 degrees. Combine all dry ingredients. Combine oil, eggs, & pumpkin in separate bowl. Add wet ingredients to dry mixture stirring until just moist. Stir in chocolate chips if using. Scoop batter into 28 muffin cups coated with cooking spray or lined with paper liners. Bake at 350 degrees for 18-20 mins or until inserted toothpick comes out clean.
