Porcini Chicken Salad


  •   rotisserie chicken, skin removed and chopped
  •   stalk celery, chopped
  • 1/2   small onion, chopped
  • 1 Teaspoon  Porcini Poultry r.u.b.s.*
  • 1/2 Teaspoon  fresh thyme
  • 1/2 Cup  mayonnaise
  •  Dash of  sea salt
  •    Iceberg or Bibb lettuce
  •    Oat or multi-grain bread

Whip up this flavorful recipe when you're looking for a quick meal. It uses fresh herbs and a store-bought rotisserie chicken for a delicious but simple dish. 


Place chicken in a medium size bowl and add the remaining ingredients.  Mix gently and season with salt to taste.  If too dry, add a little more mayonnaise. Serve on your favorite grainy bread with lettuce.
