Ingredients

  • 4 thin chicken breast slices
  • 2 egg whites
  • ½ cup flour
  • 1 cup bread crumbs
  • ½ cup marinara sauce
  • ¼ cup shredded mozzarella cheese
  • Pepperoni slices, chopped
  • Salt and pepper to taste

Directions

Heat oven to 350 degrees.

In a greased pan, spread out a thin layer of marinara sauce. In a bowl, mix together the egg whites and the flour. Dredge the chicken breast slices in the egg mixture and immediately dip into the breadcrumbs, covering the chicken entirely. Lay the chicken breast slices flat in the baking dish. Sprinkle the cheese and pepperoni in the middle of the chicken slices and roll the chicken, folding in the sides and securing with a toothpick. Top each chicken roll with a little bit of marinara sauce and cover the dish in foil. Put it in the oven and bake for 30 minutes. Remove the foil and bake for another 10 minutes.
