This has become my go-to salad this summer.You know, the salad that you find yourself making over and over, simply because you're either:
a) digging all of that gorgeous, ripe summer produceb) want something healthy but delicious to chomp onc) want a quick meal without putting the stove ond) all of the above?! ;)
Yes, this humble salad ticks all the boxes, friends!
But as with any simple salad, ingredient is king.I don't need to tell you that. Right?!
Think juicy and sweet cantaloupe melon, smoky and salty ham, creamy Feta, tangy olives...Party on a plate, I tell ya!
Also, we all know that melon is a perfect match to salty, cured ham.But the revelation came when I substituted my usual prosciutto for Black Forest Ham.
My, oh my!If you can get it near you (most delis should stock it. Have to stock it!!), then I cannot recommend it enough.
The smell alone will send your taste buds into overdrive, and you'll start salivating (and eating a few chunks..) while you prepare the salad. In fact I'm salivating right now, writing this. Sorry for the imagery, but my tummy is actually rumbling right now at the thought of this juicy salad.
Which is a good sign that you're in for a treat.Just hope I have all the ingredients in my fridge to hustle it up for lunch! ;)
Cantaloupe &Cured Ham Summer Salad
There are no measures. The point is that you add as much of any ingredient as you like!Easy, right?! ;)
* Cantaloupe melon cubes* Smoky, cured Black Forest ham* Feta cubes* 1 soft oiled egg per person* Crispy lettuce* Sliced salad onions* Cucumber* Black olives* Cracked black pepper
Add the lettuce and cucumber as base on a plate or platter, scatter onions on top. Add melon and Feta cubes.
Nestle ham in between the melon, and top with boiled eggs. Season to taste with cracked black pepper.
In my view, this salad need no vinaigrette as it's so juicy from the fruit and veg, but this one works really well:
Quick Salad VinaigrettePer person.
In a small clean jam with a lid add:
1 Tablespoon of olive oil1 Tablespoon of white-wine or cider vinegar1 tsp of whole grain mustard (optional)2 tsp of warm water
With the lid securely fastened, shake the jam jar vigorously for a few seconds.Use a teaspoon to drizzle on the salad.
If you want more dressing, double-up the quantities.
