Inspired by the "Mike’s Breakfast," a morning bagel sandwich on the secret menu at Espresso Love (Martha’s Vineyard — Edgartown, Mass.), this wrap takes the summer favorite to another level. I’ve added to the original Mike’s Breakfast flavors of avocado, cream cheese, and tomato, with other fresh and hearty complements like turkey bacon and shredded carrots.
See all avocado recipes.
INGREDIENTS
- 1 extra-large wrap
- 1 tablespoon cream cheese
- 2 thin slices tomato
- 1/4 cup sliced avocado
- 1/4 cup shaved cucumber
- 1/4 cup shredded carrots
- 3 strips turkey bacon*
- 1/8 cup alfalfa sprouts (optional)
DIRECTIONS
Lay out the wrap and coat with an even layer of cream cheese, leaving some room around the edges for handling. Next, lay down the tomatoes, followed by the avocado, cucumber, carrots, and bacon. Fold, wrap, crunch, and enjoy! (For added greens and crunch, top with alfalfa sprouts.)
