At Seattle's Hot Cakes Molten Chocolate Cakery, Autumn Martin and her team have been whipping up a new kind of shake: the boozy kind. The flavor of mezcal in this shake is unmistakable. Reminiscent of tequila but smokier and fuller — yielding an intense and rich experience. Martin pairs it with caramel, as they both share smoky attributes. The right amount of lime transcends this milkshake into a delicious anytime boozy dessert.

INGREDIENTS

For the drink:

  • 1 ounce mezcal
  • 1 ounce Hot Cakes caramel sauce
  • 1/2 ounce fresh lime juice
  • 3 scoops vanilla ice cream, soft
  • lime salt

For the lime salt:

  • zest of 1 lime
  • 1 tablespoon sea salt

DIRECTIONS

For the drink:

Blend the mezcal, lime, and caramel sauce in a blender until smooth. Add the 3 scoops of soft ice cream and blend until just incorporated. Top with whipped cream and a sprinkle of lime salt
 

For the lime salt:

Preheat your oven to 250 degrees. Zest 1 lime. Lay the zest out on a cookie sheet and dry in the oven for about 30 minutes until crisp. Chop fine with 1 tablespoon of sea salt.
