Ingredients
  • 1/4 cup unsalted butter
  • 1/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 2 tablespoon maple syrup
  • 1 egg
  • 2 apples, cored and grated
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup quick-cooking oats
  • 1/4 teaspoon baking soda
  • 1/2 cup chopped walnuts
Directions
  1. Preheat the oven to 400 degrees.
  2. Using an electric mixer, cream together the butter, oil, brown sugar, and maple syrup. Add the egg and whisk until combined. Add the grated apples, cinnamon, cardamom, cloves, vanilla extract, and salt. Sift the flour into a mixing bowl and add the oats and baking soda. Add the flour mix gradually to the wet mix. Mix with a spoon or spatula until homogenous. Fold in the walnuts.
  3. Line a muffin tin with paper or foil liners. Fill with the batter ¾ full. Bake in the oven and reduce the temperature to 350 degrees after 10 minutes. Continue baking until a knife inserted into the center of each muffin comes out clean.
